Xylitol is a natural sugar substitute and a sugar alcohol found in plants, used in sugar-free gum, sweeteners, and other products for its ~sweetness and dental benefits, as it doesn’t promote tooth decay and can increase saliva production. However, it is highly toxic to dogs, causing severe health consequences including liver failure. For humans, large amounts can cause a laxative effect.

Physical & Chemical properties
Physical Properties
- Appearance: White crystalline powder.
- Molecular Formula: C₅H₁₂O₅.
- Molecular Weight: 152.15 g/mol.
- Melting Point: Approximately 92–96 °C.
- Hygroscopicity: Xylitol is hygroscopic, meaning it absorbs moisture from the air.
- Solubility: Highly soluble in water.
- Caloric Value: Contains less than one-third the calories of sucrose.
- Sweetness: Has a sweetness equivalent to sucrose.
Chemical Properties
-
Stability:Exhibits excellent pH and heat stability in food processing. It is also stable in alkaline solutions.
-
Chemical Reactivity:It is a sugar alcohol (alditol) but is chemically less reactive than its corresponding aldoses and ketoses because it lacks a reducing carbonyl group.
-
Heat of Solution:Has a high cooling power due to a negative heat of dissolution, creating a cooling sensation when dissolved in water.
-
Non-fermentable:It is not easily fermented by oral bacteria, which prevents the formation of plaque-forming acids and contributes to better dental health.
-
Low Glycemic Index:Xylitol has a low glycemic index and does not interfere with the insulin metabolic pathway, making it suitable for diabetics.
Application
Food & Beverages
- Sweetener: Xylitol is a low-calorie alternative to sugar, used in candies, chewing gum, chocolate, baked goods, and desserts, providing a sweet taste without significantly affecting blood glucose levels.
- Diabetic-friendly products: Due to its low glycemic index, it is suitable for people with diabetes.
