- Odour: Odourless.
- Sweetness: Extremely high, approximately 7,000 to 13,000 times sweeter than sucrose.
- Melting Point: 99.3-101.5 °C.
- Solubility:
- Very slightly soluble in water at 25°C (0.099 g/100 ml), but solubility increases with heating and lower pH.
- Sparingly soluble in ethanol.

Chemical Properties
- Structure: An N-substituted derivative of aspartame and a dipeptide of aspartic acid and phenylalanine.
- Chemical Formula: C20H30N2O5. (Note: This seems to be for a related compound, not the monohydrate).
- Molecular Weight: 378.47 g/mol. (Note: Again, seems to be for a related compound). The monohydrate form has a formula of C24H30N2O7·H2O and a molecular weight of 476.5 g/mol.
- pH: Amphoteric, with pKa values of 2.94 and 7.96 for its carboxylic acid and amino groups, respectively.
- Isoelectric Point (IP): 5.45, a point of minimal charge and solubility.
- Stability: Stable under standard dry storage conditions at 25°C/60% relative humidity for at least 60 months and under accelerated conditions (40°C/75% RH) for 6 months.
- Heat Stability: Chemically stable under the heat of cooking and baking.
